Air France has unveiled its new summer menu for the La Première and Business cabins, which will be offered to Business and La Première passengers from July to October 2023. These menus will showcase French gastronomy, with a new cycle of original recipes designed by French Michelin-starred chefs Régis Marcon and Thierry Marx, as well as Meilleur Ouvrier de France pastry chef Philippe Urraca.
For the first time, two-Michelin-starred chef Thierry Marx will be working with Air France on its Business menus. Recognised as one of the most respected culinary talents of his generation, Marx has designed eight dishes that highlight plant-based ingredients in a flexitarian approach, drawing inspiration from the diversity of France’s terroirs.
In the La Première cabin, customers can enjoy menus designed by three-star chef Régis Marcon, who draws inspiration for his recipes from the Ardèche and Auvergne regions of France. Pastry chef Philippe Urraca, Meilleur Ouvrier de France and a leading exponent of the French pastry-making tradition, has devised a delicious and delicate cycle of four desserts.
The chefs worked in collaboration with Servair, the world’s leading airline caterer, to create dishes using fresh, local and seasonal produce. The meat, poultry, dairy products and eggs used in each menu are of French origin and the fish comes from sustainable fishing. Vegetarian menus are also systematically offered on all the airline’s flights.
In 2023, Air France is working with seventeen chefs to promote French excellence. These culinary talents will offer exceptional dishes on departure from Paris and certain international destinations in the La Première and Business cabins, as well as in the Paris airport lounges. Air France, the only airline to be associated with so many starred chefs, is thus reaffirming more than ever its role as ambassador of French gastronomy and know-how throughout the world.
